To the best of my knowledge, copper gaskets work very well, as long as the surfaces being joined are flat, and they can be re-used. I'm quite sure that drag racers have used them since the '50s, although any serious high output engine today probably has O-rings.
As far as painting on a sealer, there's a product called copper-coat, or something like that, that my old boss in MA used to use. It was in a can with a dauber brush but I think I've seen it in a spray can, which puts on an even coat. Another spray product is "High Tack" from Permatex. I think it is a thinned liquid form of their Permatex 2 Non-hardening Form-a-Gasket, which I've used for years to seal 95/96/Sonett transmissions.
I may be in the market for a set of copper gaskets for an old open deck engine if I do a total restoration on the '67 96 V-4 that I acquired a while back. (I know Chip won't supply them.) I have my _old_ '67 and parts from my sister's '68 Deluxe to use for the job. The "new" car is less than 400 off the assembly line than the (now) rusted out hulk that I've owned since 1969, so I'm assuming that it had an open deck engine, although I don't know if it would be a Red or Silver one. I'll probably build it as a Red engine.
