It sounds like you probably won't be satisfied with ANY of the systems available, but I would recommend you bring a few CD's to a local dealer and try out the stereos in the '07's. The base model stereo for '07 is aparently a GM unit that is a vast improvement on the prior system in both sound quality and functionality (it tipped the scales for me when deciding on a loaded '06 SS or a base '07). Sound quality on the base '07 unit would be adequate for most folks but its probably about average for factory car stereos these days which IMHO isn't bad but not great (fine for me commuting for an hour each way).
I thought the BOSE system sounded much better than what I NEEDED and I'm fairly particular but not extreme when it comes to sound needs (I would have bought the BOSE for $500 but not $900...that is just a rediculous price for a car stereo). I would add that I think the sound systems in these cars would be much better if the factory focussed more on the QUALITY of the speakers rather than the QUANTITY but I'm sure the marketing folks want the numbers as high as possible.
One thing is clear is that while it may be POSSIBLE to mess with the sound systems, your life may be made much simpler if you just find a car with the system you like and avoid messing with the electronics. Perhaps a speaker swap with compatible but improved units would be least risky but then again, you don't really know if its going to sound better until you've spent the money and tried it out.
