Seems strange that the error doesn't get recorded. Maybe keep a digital camera in the car and take some pictures if they don't believe you.
Our '06 93 SC aero had a similar intermittent fault about a year ago. The dealer, after some preliminary diagnostics, recommended a replacement control module. At the time they told me there were 30-40 on back-order across the country and it took a while for one to become available (so it must be more than you and me?).
Once you can prove the fault is occurring I think you need to say something like: "Electronic Stability Control (ESC) has been hailed as the most important safety device since the seat-belt. I bought this Saab because of its advanced safety systems. I think it is reasonable for these systems to be available to help save my life 100% of the time. Please fix it."
If no luck, you may need to work your way up the management or maybe another dealership if you have the luxury of choice. Good luck.
