First of all, your oil consumption could likely be through the positive crankcase ventilation (PCV) system. The 2.3T engine is now on Rev 3 PCV - when I upgraded from Rev 2 to Rev 3 my oil consumption dropped from a cup per 1000 miles when towing the CV to nil.
Second, despite your best efforts (and 7K change interval with Mobil 1 should be good enough) you could have suffered engine damage because of the effects of inadequate PCV. Unlikely, but possible. It's the oil pressure light coming on - it should *never* come on so long as the oil level is above the "minimum" line (and probably not even then). Your 7K oil change interval should be adequate to preserve your warranty status, but Saab has been kind of funny about that. I've heard of them requiring the oil change tickets be punched *on* the 10K anniversaries, rejecting claims when changes were done more frequently but not *on* the specified interval. Crazy - written by a lawyer with a liberal arts undergraduate degree, no doubt.
