Anything is possible, but my guess is that the only affordable way would be to find a wrecked 9-5 with ventilated seats and buy the seats or the entire interior. That won't be easy... it hasn't been a popular option... but a good salvage yard can put a standing request on a "locator" and sooner or later something will come up. If you tried to buy all of the necessary parts from Saab, you would undoubtedly spend more than you would if you traded in your current car on a new/used one with ventilated seats.
I opted for the ventilated seats on my 2004 9-5 and IMHO they're OK but not great. The fans are noisy and very little air flows where you are actually sitting so that cooling off requires changing positions frequently and/or leaning forward to create a space between my back and the seat surface. My seats have perforated leather surface. I think earlier cars had some kind of woven surface that may have been more effective.
An easier and more affordable alternative might be high qualtiy genuine sheerling seat covers -- they're not just for winter.
