If you can get your hands on a point and shoot infrared thermometer you could check the actual temperature around the thermostat and radiator etc. I live in a warm climate, so I don't see as much of this. I would expect to see at least 180 F at the thermostat housing within a few minutes of driving. If it's normal there, you may have a sensor problem. If it's actually running cold, the new thermostat is probably a dud.
