I would be very surprised if it were a head gasket problem. The V6 almost never has head gasket problems. I think coolant smells sweet when it burns, so that's probably not what's burning. After sitting overnight start it and run around back to see if blue smoke comes out. I can't describe the smell of burning oil other than it's burning oil but this can be a sign of a failing turbocharger; something not too uncommon on these cars. A turbo doesn't usually throw a CEL or make the car run rough though. Have you had your DIC's replaced yet? They can make it run rough maybe. They also tend to crap out while starting when there's a heavy load on them. Maybe you're smelling melting plastic of them. I'm just throwing stuff out there now. Let us know what you figure out.
