All vehicles do this, but the 9-5 seems to take longer. Whenever you drain and add coolant to a vehicle you have to run the engine long enough for the engine to get warm and the thermostat to open. You can tell when this happens because the upper coolant hose suddenly goes from ambient temperature to HOT. When the thermostat opens the coolant level will drop by an amout equal to half the over-flow bottle or more, and you have to add more coolant/water mix.
The first time I drained and re-filled the coolant on my 9-5 I was surprised at how long it took for this to happen, maybe 10 minutes. I even stopped my Cummins Diesel Mechanic neighbor from mowing his lawn just to verify I was doing it correctly.
