$1200.00 in labor alone sounds like a lot (10-12 hours). But it is one thing that can really mess up the job on a 9-5 V6 when replacing the oil cooler and that is if the oil cooler pipes doesn't come loose from the oil filter adapter and engine block.
The flare nuts on those pipes are really weak and if the nut is frozen it can be a bear to get them out.
It is a must to loosen those pipes to be able to get the oil cooler out of the engine if you don't want to be brutal and bend the pipes out of the way.
Doing that might create a leak for the future if the banjo bolt fitting is not completely flat with the oil cooler surface when the pipe is bent back in place.
So maybe the shop have had a lot of problems before when doing this job so they have added extra hours to be on the safe side.
4-5 hours is more reasonable when everything goes as planned and no frozen bolts or nuts show up.
