The temp gauge sensor is designed to sense liquid temperature if the coolant level is below that of the sensor it will cause the gauge to read low because it does not read air temp. The reason your coolant was gushing out of the tank is because it was boiling and rapidly expanding. To boil coolant under pressure it has to get very hot probably in the area of
250F. Your guess that the culprit is the bypass valve is probably accurate, it would be the most likely component to fail. You can get a replacement at a reasonable cost through eEuroparts.com and it is a relatively easy DIY job. There are instructions to be found elsewhere on this website. I would start by topping off the coolant level and pressure testing the system. If it looses pressure rapidly you have likely popped the head gasket (or worse).
If it holds pressure you should start the engine and
1:Look for leaks and white smoke from the exhaust.
2:Smell for that now familiar coolant smell
3:Listen for unusual noises (Knocks Squeals etc)
If all seems normal take it for a (short) drive and watch your gauges and SID warnings. Recheck for leaks and coolant level.
