For me, the biggest reason is access to the wiring diagrams. I was an Electronics Tech. for 25 years so the elctronics in the car is the easiest part...usually.
Here are some examples of things I've done to my Saab's over the years (usually when they're pretty new). In many cases I've added features before Saab offered them
1. Autochromatic rear view mirror (1986)
2. Disable shift-up light (1986 - )
3. Add oil pressure and voltmeter gauges (always)
4. Xenon lowbeam system (2000)
5. XM radio (2000)
6. Handsfree adapter for cell phone (2000)
7. Bluetooth for a 2000 Aero (2006)
8. Modify Night Panel functionality for my 2007 Aero
9. Add halogen or Xenon high beams to the inner headlights on my 2007 Aero
10. Add airhorns for my 2007 Aero
11. Modify Park Assist to mute radio when it's operational
12. Modify range of brightness for dash dimmer control
and so forth...
