Unlike earlier cars I don't think there is anyone to program this off by default on 06/07 cars. I wish there was. It does remember that it was switched off over short durations at least which is nice for fuel-ups and rest stops.
The A/C should kick in ony as needed to cool or manage humidity to keep windows clear. In the summer I usually have windows down so I just turn the fan switch all the way down which kills the the whole system since I don't need hear or ventilation either. At other times if not needed I do the press-press-press-press drill just to ensure it doesn't kick in when I don't feel it necessary.
