I couldn't find a polar white/grey interior among the leftover '07 when I was looking a month ago. So I settled for the polar white with parchment -which I now prefer. It's not really tan, and not white. More of a putty color. I've attached a picture of my car's interior (I think).
I also have a '99 SE. While they don't have the extra bolstering, they were still the most comfortable automotove seats I'd ever had. The bolstered Aero seats are at least, if not more comfortable. But the bolstering seems to hold, or confine the occupant, so I never quite understood why larger people comment that they like that feature.
My car has vented seats and the visibility package. As much as I like them, I'm not sure either is a "must have". Any 9-5 is pretty well equipped. And just about all left-over '07s seem to have the visibility package with Xenon lights.
You might consider whether you need Onstar. Some swear by it. It no doubt saved a neighbor's life a year ago when she passed out at the wheel and drove off the road into some trees. Even so, many opt not to continue the service past the free trial period and are left with some rather expensive, but useless electronics.
I specifically looked for a car without it.
