I think the tables accurately show the relationship between camber and suspension height. I doubt that they accurately show the alignment of an individual vehicle. In my case, the camber seemed to be pretty much within the expected tolerance range, given the ride height, but the suspension seemed a little lower in the rear than spec. (You think my carrying loads of bricks?) And the rear tires were showing a lot of inner edge wear. Anyway, a bunch of shims in the back and some grinding on the strut to allow the steering knuckle to rotate (slightly) on the lower pinch bolt brought the suspension into spec.
