91 octane gas and the money in my pocket

Over the last 6-8 months I've been putting the premium gas (it's octane 91 here) and nothing but it. The price of gas has gone up and I'm wondering if this is really all that necessary. I've read some posts about how whenever it is cold, it does not matter as much...I do not know much on the topic, but I do not do any "performance" driving. I know the T7 can accommodate a min of octane 87, but am I doing any "bad" to the engine by not feeding it the premium?

Can I feed it regular or the middle gas for a while, and then every few times give it the premium? Whenever it is really cold (Canada) in the winter, should I give it octane 87 instead? I'd like to try and stick to a "regular" plan. Thanks in advance for your help
