The polycarbonate lenses used on those headlights have a UV protection coating applied to help prevent the oxidation/yellowing process. Polishing may remove the oxidation, but it will take of any remaining coating as well leading to even more rapid re-yellowing. Some people advocate a coat of UV-inhibiting car wax on the lenses while some polish kit companies supply a wipe-on coating to be applied after the polishing.
Hope this bit is useful. I'm about to go through the same thing with one of the lights on my '02 Aero and did some of this research yesterday.
