It's either the coolant temperature sensor or your thermostat. Tomorrow morning pay attention to how long it takes for the temp needle to reach the operating temperature. If it seems to take a long time your thermostat may be stuck open a little. When the engine doesn't reach temperature in a certain amount of time it will shut off the gauge and throw a CEL. If it seems to warm up fine I would go ahead and replace the sensor. It's very cheap. Something like $13 for the part and half hour of labor to have it put in.
