I attended an Aero Academy last summer where I had a chance to drive both. Like you, I thought the 9-3 felt lighter and a bit more agile. However, autocross times for drivers in 9-3s v. 9-5s didn't support the notion that the 9-3 performs any better than the 9-5.
That was also the viewpoint of the instructors.
Personally, I don't think the 9-3 interior features are noticeably cheaper than the current 9-5. In many ways, the 9-3 is better appointed. it also has a contemporary styling; inside and out.
But, I didn't buy my 9-5 to race. If that was my plan there would be a Viper or Corvette in my garage.
As dated as the 9-5 is (especially the interior), as long as I'm not constantly jumping from a newer vintage car to it, I'm quite happy to tool about in my '07 Aero, or '99 SE. In my view, either of them will provide a more pleasant touring experience than the the 9-3.
