I assume they are replacing the coolant temp sensor and thermostat. thats a reasonable dealer price, and reasonable for them to replace both. I hope they are not replacing your temp gauge.

-$880......Water pump, belts, etc...
is the water pump leaking or getting noisey? that is pricey for the water pump, but they might be including belt and tensioner & pulley, etc

-$945......60K
a reasonable dealer price for this. BUT if they are already including tensioner and pulley and belt in the above price be sure you are not getting double dipped.

- Webbing on the cat converter
there is a flex pipe just before the cat. that is the webbing that they are talking about. you can replace the flex pipe alone without replacing the cat.

my thought: rescue your car from these guys and take it to an Indy.
