temperature sensor was replaced not too long ago.
My wife's 2003 Aero auto (i.e. same as yours) did exactly the same thing. Coolant gage went to zero after driving on cold days, Check Engine Light came on etc.. I kept pulling Fuse to reset CEL until recent warmer days.
I ended up taking the car to a dealer for the thermostat and coolant temperature sensor replacement with other work done on the car as well.
If you have a dealer that charges "reasonable" price, I would suggest changing the coolant temperature sensor again as well. The sensor is cheap, under $20, most of the labor cost would be replacing the thermostat. The dealer charged me 2 labor-hours to change the thermostat and coolant temperature sensor. That job was just over $310 including all parts (temp sensor $19, thermostat kit $26, and coolant $27). If you live in NJ, this was done at Reinertsen Motors in Denville, NJ.
If you are handy and have good collection of tools, you can do this yourself. From your post, I gathered that you toyed with the temperature sensor so I assume you're way ahead of me in wrenching skills. There are good documents here and other sites with pictures and instructions.
