I lived with this problem for over a year. 2004 Aero.
Here is what I finally found out.
1. The temperature gauge would always work in the summer.
2. When out side air temperature dropped, the guage worked after a startup, bu never rose very far. After 5 to 15 minutes the gauge would suddenly drop to nothing and never read again wuntil the car was stopped and restarted.
3. I learned that the gauge is NOT directly connected to the temperature sensor on the engine, but rather to the computer. The computer not see adequate temperature readings after a period shuts the gauge off to indicate you have a low engine temperature.
4.I bought an OBD reader that can readout many functions on a continous basis. With that I could montior the temperature as I was driving. Even when the dash gauge shut off. What I found that on warm days in traffic the temps would go up to 180, but under way never got over 160. However once the ambient air temp fell below 50, then it ran about 130 -140. And it was those conditions that shut the gauge off.

5. So after the Saab dealer said the charge to replace the thermostat was $215 plus tax, I bought a new thermostat from a site sponsor Eeuroparts, puzzled over how much easier it was do get at on my 9000 with the same engine and finally just started in with small sockets and changed it in less than 45 minutes. Of course I could do again in half that time. I did find that the existing Thermostat did not quite seat all the way shut.

6. New thermostat, car runs at 183 degrees matter how cold it is outside, dash gauge is in the middle and check engine light or pending code for low temp has gone away.

BTW I was not aware unil I got his OBD reader that the system supported real time read out. I shows Throttle position, amount engine load, and at least 20 more items. You can even graph them on the reader.
