Your best bet is to obtain a copy of the Saab WIS - Workshop Information System. This is a Windows application that is used by the mechanics at dealerships. Check around this and the General BB to see if anyone has posted recent links to the downloads.
As for the camshafts - your motor has FOUR of them - two of them will be on top of the front head, one for the inlet valves, one for the exhaust valves. Usually, they are not in the way, and the head can be removed without removing the cams from the head. If they do need to be removed, then they need to go back in the same place they came from (inlet to inlet, etc.). You'll remove (and later replace with new...) the timing belt.
This is a pretty major job to undertake. Once you've gotten the motor torn apart to where you can replace one head gasket, it's not that many more bolts to remove the rear head, and replace that head gasket as well. Then you know you won't have to be that deep in there again for a LONG time.
And don't forget to replace the timing belt tensioner and pulleys, and the water pump (unless you know that is pretty new...).
