You are right in that it will not start the car *unless* you put the key in and turn it while using the transponder (i.e. just hold the head of the key) from another key close enough (a cm away) from the key antenna. I've done this before, and it worked!
Yes, it only opens the door, so it's not much of a valet key.
I wouldn't ever leave a working key+transponder with me in the car; not the best of ideas...
You *can* use the old style banana and separate key. I have, for the 2000 9-3 SE one of both. An all-in-one and a separate key with banana fob. Still though, in the separate key the transponder chip IS inside of the key. I wouldn't want to get it wet (it's a small little chip).
I guess you're best bet would be one of those valet, metal-shank-only keys to open the door (and, even though I just said I wouldn't leave a key in the car, I just don't see another way) and get the key from inside the car in a secretly hidden obscure location (i.e. NOT the glove compartment :0) ).
