brake rotors -- how many times can you turn them?

I've swapped out my front brake pads a couple of times due to unhappiness with either dust or performance and each time after 20k mi or so the wheel starts shaking hard on high-speed braking. In fact every car I've ever owned has done this multiple times in my ownership.
Anyway I've already turned my '00 Aero's (Viggen) rotors twice to stop this. At what point do you need to give up on the rotors and buy new ones? Is there a way to tell?
