I have a 2010 9-5 Aero with 0 options. I love it. I've had it since Feb, and it has been rock solid. I was originally planning to buy a 9-5 base/premium (I think you need the premium to get the sunroof, but I could be mistaken) so I test drove one a few times.
I did like the suspension and interior of the Aero better than the base (engine too, but that's kind of obvious). Because it was a 2010, I got it for about the price of a low optioned base model.
The sunroof in the 2011 is nice, and the 4-banger is plenty peppy - not so fast from 0-60, but like all Saabs, fast where you need it for passing and merging. I thought the ride was a little stiff and, at times, bouncy - especially in the back seat.
As far as missing options, I don't miss any. If you're not interested in Nav (I wasn't) or sound upgrade (the base 9-5 stereo is better than the upgraded stereo in my 08 9-3, not quite as good as the upgraded stereo in my '05 9-5), then that's about it. I thought the HUD was annoying (even when off, there's some glare on the windshield from the HUD projector). The parking assistance looked interesting, but never tried it. There is a feature (at least in the loaded Aero) that read speed limit signs that was cool, but it's not a reason not to buy the car.
The base sound system looks "low tech" because it is green (reminds one of the old fashion green screen computer terminals), but when you drive at night and see the green ambient lighting, it all makes sense (at least to me).
To state the obvious, you really should test drive the car before you buy it :).
