So you replaced the MAF with used ones and still have a problem? Maybe a new one, or at least a known good one from a properly running temporary donor car rather than a "probably good" one from GoldWing (who are excellent suppliers, btw) is worth a try. Could be a wiring problem too - there is a known weakness in the wiring harness for the O2 sensor line, for example. That could explain the intermittent nature of the problem.
The reason it seems to run fine once the CEL is set is that once a component is flagged as failed, the software can fall back to work-around mode and create a simulated reading based on things like RPM, temperature, atmospheric pressure, O2 sensor output, post-combustion ionization potential, and throttle setting. The result is close enough for good running if not for emissions controls.
