I have owned two 2003's and a 2007 9-5.
In 2007, perhaps sooner, the accountants at General Motors removed that handsfree wiring harness and connector from behind the radio. Trust me, I searched and searched and searched and searched for it before finding this out.
In the earlier 9-5's it is a piece of cake to unplug Onstar from that connector and use a Saab wiring harness to install a bluetooth kit. Like others, I installed a Motorola IHF-1000 kit this way.
In my 2007, I ended up installing a Motorola IHF-1000 but I just installed the speaker that comes with the kit underneath my steering wheel. Drilling those holes was painful by the way.
So, when I got or made a phone call I just turned the radio off. I got used to it even though it was a minor hassle.
There is a dealer bulletin about how to wire a handsfree system into the radio harness but it involved cutting and splicing and wasn't very clearly written so I didn't want to take the chance that it might, or might not actually work.

P.S. Other things GM deleted include the trailer wiring harness, the inboard halogen lights (if you have Xenon headlamps) and a few others. Idiots. The driver's manual still talks about towing weights but there's no way to connect to the lights except to splice into wiring...go figure.
