2001 9-5V6-3000 Mile Family Trip--Oil Weight Change?!!?

I am the original owner of a 2001 9-5SE 3.0/V6. Given the recent brutal heat here in the NE and an upcoming 2 week long distance family trip of about 3000 miles (car loaded down--2 kids youngest is 2), been questioning my oil weight choice as I baby my Saab (and additionally, don't want to be sitting by side of the road with kids). I have been reading a variety of posts on oil recommendations. but still not found an answer to my questions and would most appreciate others thoughts.
In the beginning with this 9-5 I used Amsoil 5W-30 . . . and later, when the Amsoil "Signature" 0W-30 came out (back then reported as their "best") switched to that (now this line comes in other weights). (I am not trying to open up a Mobile (or any other brand) vs Amsoil debate . . . it's simply I first started using Amsoil in the early 90s with my Jeep, 900's, 9000, etc. and have kept with it).
Question is: if a full synthetic does not break down (as Amsoil reports--when changed as instructed), what is the benefit of running a 40 weight over a 30 weight oil if the Manual says 30 or 40 weight especially if a 40 weight is thicker and thus requires more effort to push through the system . . . and reportedly, thus, reduces gas mileage ever so slightly? Is there any gain in using a 40W? (I called Amsoil and they said "no-given manual allows 30 or 40 weight, 30 weight lubricates just as well at high temperatures--no benefit over 40 weight, and 40 weight would tend slightly affect gas mileage (as compared to 30 weight)." True?).
And also, apart from cost, why would not everyone use a more "pourable" 0W (as opposed to a 5W or 10W) if it is more readily available to lubricate at low temperatures? Granted if you live somewhere that never goes below 100 degrees F not likely to need this, but apart from slight additional cost, it should be every bit as good in lubricating as a 5W or 10W. I therefore wonder, with my upcoming trip looming, is a full synthetic 0W-30 not the best choice for my 9-5 SE 3.0/V6?
I most appreciate your thoughts-thanks!
