afaik, Bilstein B4 is "Bilstein Touring" which are readily available and commonly used on the classic 900 (and maybe also 9000?). I have a pair on the rear of our 1993, and they were cheaper than OEM, similar to OEM in performance (only a tad stiffer), and seem well made - they are holding up well for me so far and many others liked them. Since you are in Toronto, you would probably want to order from the same place I did in BC (Essex). I paid something a hair over $100 for a pair of rears shipped to my door...
but afaik, they are not available for the 9-5. You could call essex and see, but when I checked on the website they were not available. So I went Koni. Honestly I wish I had put Koni reds on all 4 corners of the c900. On sale that would have cost about $300. I spent over $700 on konis for the 9-5 (partly because I had to buy them when they were not on sale). C900 shocks (and parts in general) are way cheaper than 9-5 shocks (and parts in general)...
My advice would be to get the Konis on sale. I have not found the ride excessively firm and I'm on the middle of the range - you could leave them at the lowest setting if you were concerned and I'm sure they would be fine.
