Recharging refrigerant

I added most of one 12oz R134a can. I'm not sure one can ever get these cans completely empty. The AC blows colder, but note cold enough. It cooled a little before starting so I don't think the system was entirely empty. Do I continue to add some of another can? I'd like to get it cold for now and if it leaks out, I'll have any indy find the leak. I've done this in revere before and it's been more costly to have someone else charge the system first only to lose all that refrigerant.
How do I know when to stop adding refrigerant when using these cheap low side fill gauges. It hovers roughly between 25 and 45 psi. Should I find a way to get a thermometer in the center vent?
