Changing the thermostat on a V6 requires a bit more disassembly than simply removing a hose and the housing. To even get at the housing screws requires access that is gained by removing the upper inlet manifold sections.
See below for a pic from Anders' (SWEDECAR) gallery. The thermostat is the thing to the left in the "v" between the heads. The plate with the banjo fittings covers the oil cooler.
Unless you are having a problem with it now, it might be better to leave it until you **NEED** to be in there, such as replacing the timing belt, etc.
