My recent experience with this was indeed a CEL and P0116. It turned out to be a faulty themostat. I had replaced it not 9 months earlier as part of cooling system PM. The symptom was the gauge needle would barely move off of cold.
It could be hypersensitivity on the part of the computer. I had installed an aftermarket Wahler thermostat and now I've installed the OEM Motorad unit. There are many posts on this board about this. It seems the usual failure is the thermostat and not the temperature sensor. Both are easy and inexpensive (< $30) DIY fixes.
