On a 2004 arc, the factory coolant was dexcool. That matters less than what is in there now. What colour is yours? Dexcool is strongly orange coloured. If you have it, it is fine. There are other good coolants out there. My other (older) SAABs get Mercedes coolant (G05) but I haven't bothered to switch over the 9-5 even though I've done work on the cooling system and it would be convenient to only have to stock 1 type of coolant... Bottom line: Dexcool is fine. If you have the green $#!t, flush it thoroughly with water and put something better in there.

I would only use a genuine SAAB tstat. Not expensive. Easy swap. Some would do the temp sensor at the same time. I'm not sure it's the sensor that fails so much as the connector and it is a trivial job (aside from coolant draining/loss)... but for a $10 part, may be worth your while to avoid the nuisance...

Water pump, it's mainly the seal that fails, but for all the work, you might as well put a new one in there (and do belts and pulleys etc at the same time)... and if you are going so far as to do this, replacing the coolant bypass valve at the same time with hoses would be a wise move also. Look for any other worn hoses, etc...
