If doing your stat directions here: http://www.twinsaabs.com/9-5_repair/thermostat/step1.asp?nsteps=2&nointro=1 You may want to replace rubber hoses while the system is drained (if it wasn't done since new) and maybe installing McKay heater hose to replace bypass valve.
If just doing the sensor, very easy and can be done without draining the coolant. Just put your finger over the opening between removing old sensor and installing new.
