They don't "wear out" in the way we are used to see plugs but they do get worn/old.
Just last week I had a long time customer come in for an oil change and noticed a severe misfire under heavy acceleration (which he did not mention or complained about) and since I had the history of the car, it was due for the 120K major service with plugs at the next oil change.
I threw a set of plugs in the car and it ran perfect again. This was the NGK PFR6H-10 I had installed about 58K miles earlier together with a new IDM.
So yes, they do wear out in a sense but it is unusual for them to start to misfire like this.
