I would try a different brand in this case.
I had a similar problem when I 'preventively' replaced the Motorad thermostat on one of my daughter's 9-5's. I put in a Wahler T-stat and started getting CEL for "engine not at temperature" - in the summer! This is an '06 so some of the electronics and error checking may have changed over time.
After changing the T-stat back to a Motorad we have not had that problem for a year and several months. The nominal difference in the temp ratings between these two T-stats is between 0 and 1 degree C, but the difference was real for my situation.
