It might be dependent on the charity, but a lot of the ones around here send them straight to the metal recycler, ie more or less straight to the crusher.
I guess my first suggestion would be to list it here in the classifieds in case you can sell it to a saab enthusiast.
Failing that, if the car is for sure not worth restoring (by anyone - listing on TSN will give you the answer to that), I would suggest instead finding a good parts recycler (ideally one that has lots of saabs) and selling to them. They will pick the car up for you and pay you something for it. The parts will stay in the system for other saab enthusiasts. Especially if they have a pick-n-pull...
You can then turn around and donate the money you get for the car to the charity of your choice. There is no reason the car and the charity really need to be connected at all. That is more or less a marketing gimmick by the charity to find an alternative revenue stream. It is possible that your saab will be more valuable to a euro parts recycler than to a "crush-em-quick" metal recycler, which means more money for your charity.
