If the bypass valve is acting up.. I think you should be able to feel the hose leading into the valve.. and the one that leads from the valve to the firewall... So next time you have no heat.. check those.. and if there is a significant temperature difference between those 2 hoses .. then you know the valve is stuck closed..
Otherwise.. if the hose leading to the valve isn't hot either.. and you have no heat. then it's the thermostat.. which is unlikely as mentioned, if you have no codes..
If the valve is ok. then it's likely a blend door issue.. Either the flaps are binding.. or one of the stepping motors controlling them is on the way out...
It could also be a partially clogged heating core.. or low coolant level.. or air trapped in the core... those are less likely .. but double check the coolant level ..
