Liam, I don't have direct experience to answer this, but with all due respect I'll suggest/ask a few things:
-Have you checked with the board "Sponsors" (see pick in the header area)? They (i.e. eEuroparts) often have fine print that says if you can't find it to call them.
-Sometimes with this site's search you just have to hit the right word. Somebody may have called it 'rebuild' the seat.
-Did you try the used parts yards? They're often mentioned or sponsors also. You are however looking for a part for an often sought after 'upgrade' by the aficionados.
-The auto/boat upholstery business may have a foam to layer it with that is permeable enough and may have done similar work before. It appears the Saab idea has been replicated in other brands. Maybe even another GM model has a spare that an upholstery shop can adapt for you.
