I installed an aftermarket head unit in my 2008, retaining full steering wheel controls and CAN bus power on/off control: https://www.saabnet.com/tsn/bb/9-5/index.html?bID=282149
on pre-'06 you have some options for steering wheel control (PAC, Axxes, and InCarTech ... I installed a PAC on my '00 aero). For '06-'09 you have only one choice, InCarTech. regardless InCarTech is the easiest and fullest function of the options for all years.
[EDIT: out of curiosity I checked the incartech website and its not clear if they still offer the interface kits, but I did find these:
