On my 2000 9-5 wagon, I removed everything behind the front seats down to the metal. This was for some much needed body work. I took my time using common tools and those cheap nylon trim removal tools and didn’t break anything. I don’t think it’s practical to try to have all the replacement panels in hand, but your experience may be different. I have taken off plastic panels before for such things as the hatch gas shocks without problems. The car has been outside all its life so the plastic has been weathered. The only plastic I have had problems with is the inner frames around the door windows, but even that can be accomplished using great care.
