Inspect the fluids before you take the car to the dealer. Use an old, CLEAN turkey baster to suck out a sample and place a little of each in small glass jars for later comparison. Be careful not to cross contaminate the systems! The brake fluid will likely be a little dark from heat and age. The coolant may or may not be darker than new, depending on the age of the car.
When the car is back home, recheck the color of the fluids using additional jars and you should see that they appear fresher. If there is no difference in color, that does NOT necessarily confirm that they did not replace the fluids - your old fluids may have just been in really good condition. But if the new fluids are lighter and cleaner looking, it definitely confirms it.
You could also mark the radiator drain cock and all four brake caliper bleed fittings with a dab of paint (across the screw threads to the adjacent metal)- if any is unbroken after the service, there is your proof of misconduct. It is common in the aircraft industry to apply a painted "torque stripe" to critical fasteners. They tell you at a glance if the fasteners have loosened or been removed.
