I am 6 foot and thought the V70 was roomy, though not as roomy as the 9-5. The 9-5 has a very open-air, upright sitting, low steering wheel placement to the driver. It feels really natural. The BMWs sterring wheel was way up in the air as if you were in a race car. Something I would not want to do for extended periods in traffic holding the 10-2 position.
I was looking at the wagon for the third seat V70 and a sales person walked. When asked about the third seat she said that they did not supply them with any for the show and everyone was asking about it. She said she worked for the local dealership and it was a order only item. I guess there is not too much of a demand for them and it is a marketing ploy at least in this area. I did notice that when I exposed the rear side panels in the V70 wagon that there was just wires and no storage area like the 9-5 wagon. Also when I lifted up the area that exposes the tire the carpeted lift that actually was wood(don't quote me but I am pretty sure Volvo used actually pressed wood or plywood - The C5 Corvette uses bala wood in it's floor for durability and weight but it is sandwiched between aluminum). The Merc E-series wagon was a bit bigger and the seat, according to the sales person, had a little more incline and room than the Volvo.
