Quieter? yes, but only noticable under moderate/hard acceleration.
Torque spools up sooner? Only if you're reading paper charts, and not actually driving one. Ever consider that the V6 could be making more than 207 lb/ft. of torque (the I-4's max.) at 1900 rpm? It is, after all, a larger displacement engine with an awfully low-inertia turbocharger (low boost that comes on early). I even remember earlier articles from around '98 reporting the V6's torque peak at 2100rpm, a figure that has since been revised.
0-60, overtaking, and top speed: well, the V6 has a very real advantage with the first two. Not sure about top speed, though-- might be limited electronically by the tire's speed rating.
