I had a similar 3" stainless system fabricated for my '96 900SET and I noticed a modest difference in responsiveness and liveliness - hard to quantify in HP or torque though. Seems reasonable to assume the T5 and T7 wouldn't differ that much in their reaction to the lower back-pressure, but I'll let the experts answer that one.
Anyway, the engine response felt smoother (also did the K&N filter at same time so some auto-correlation possible). That was before I did the Speedparts ECU thing, so now it goes like a bat.
I have to say, in all honesty, after a couple of years with the exhaust, that I dislike the volume level more and more. It is just too "sake-burner" sounding. This is with a good-sized center resonator and a pretty big Magnaflow muffler that the guy said was the quietest he had. I don't know if is the diameter or the characteristics of the speed-shop mufflers themselves that make is sound that way. All I really wanted was for it to sound like a 1980's vintage 900T....
So, I'm likely to go back to stock now (with the ECU mod I can give back a few bhp without much pain) unless I can find something a little more free-flowing than stock and a lot less noisy than what I ended up with.
