Need shock absorber advice

for 2000 9-5 2.3t wagon.
OK, so my shocks are shot. I read previous shock threads for info and I'm left with these questions:
What is the difference between regular cheap shocks and the various expensive ones I see referred to on this board (Bilstein? Koni?)?
Is it in some way imprudent to replace only the rear shocks and have different models front and rear, or should I go for all four at once?
What will it cost me (independent of the shocks themselves) to get my shocks replaced?
Do I need to go to the deeply knowledgable Saab guy to have this done, or can I go to average chain?
