The amount of time to get to the whopping 7-9 psi it takes to turn the oil pressure light off is a function of oil temp, engine turn-over speed (battery voltage, outside temp), and a host of other variables. I wouldn't put any stock in it.
The oil pressure light is really a "Buy New Engine" light. It's engineered when not to come on - it shouldn't come on with thin, hot oil on a hot day at idle. Typically 7 to 9 psi. Normal running pressure at 2K RPM or above with a warm engine is 20 psi or more. You might see 40 on a cold morning. If you're running 9 psi at highway speeds, the light will be out but the engine bearings will be toast in no time.
The best defense would be to de-sludge the engine. There was a nice writeup in this in NINES a few issues back (Shameless Plug). An oil pressure gauge would be very good.
I don't know if they still do it, but in the '80's VW had a nice, two-stage oil pressure warning. They had the 7 psi at idle switch, and another, 20 psi switch that was enabled above 2K RPM. Even better, the 20 psi "high speed" switch was wired to a buzzer. If that came on, you knew you should shut the engine down immediately.
Of course, VW got a batch of 20 psi switches with intermittent shorts in a certain temp range. So they'd occasionally give you the audio warning as the engine warmed up. Very nasty. But that's another story.
