Sure these tires are rated on their top speed potential. Very interesting in germany, but not here. However the construction of a tire that can do 130 for hours on end is superior, and that matters in terms of braking and cornering as well. Cheaper H rated tires will usually sacrifice some grip for enhanced treadwear, and will be more noisy under hard cornering - a dukes of hazard/70s cop show style squealing noise will result from any level of enthusiasm in a bend.
If you can live with the reduced grip and dont go round corners fast then an S or H rated tire will do the job, but I have to ask, why on earth did you buy an aero in the first place? Having maximum performance and safety is kinda the point, you paid a premium for it with the car, but you wont for the tires?
Finally in this litigious country, if god forbid you had an accident as a result of a tire problem, and S rated tires are found on the car, a lawyer might make something of that. Manufacturers recommedations are a minimum for safety and elimination of liability. Personally I would consider V rated tires as cheaping out on an aero, Z rated tires are a minimum (with Y rated being nice to have) for me.
