We were at that stage last year (wanted a linear wagon with a stick in Merlot [aren't Saabs more of a zinfandel taste?] or blue).
What I did was to go through the Saabnet dealer list, then find their web sites. Use the dealers' own sites, not the look-alike pages on the Saab USA site. You may have to do some quick googling to find them.
Once you get there, most of the dealers have inventory lists online, and most of those include color (some don't but since I was looking for a MT, I knew I needed 55 in the VIN instead of 59).
Alternately, if there's a dealer you really want to work with, he has a way to query other dealers' inventory and arrange to swap cars if necessary. They can even find out what's on the boat headed here.
I ended up finding the car I wanted up on Long Island (I'm in Philadelphia), conducted negotiations by fax, and bought it.
