Two separate questions:
is the thermostat working correctly?
do the fans come on?
((coolant leak left cooling system non functional as a cause?))
Both have to be fuctioning correctly. If the system overheated and the temperature indicator also indicated this, then the ECU did see the same increase in temperature. If the fans did not come on, then the problem is with the fans.
If fans do not work for some reason, when traveling at speed, there is enough cooling air going throught the rad, that the fans are not needed. In that case, the A/C an cooling systems should work normally at speed but will have problems in slow or stop and go driving.
Check fuses 6 and 15 in electrical box in engine bay. There are 3 relays,probably all three in that same box, at least 2 are, WIS is confused about that point. Relays can be removed and examined for problems and basic function.
The DICE controls the fans via the three relays and low speed connects the two fan motors in series; high speed fan operation applies battery +ve to each fan.
Check the fan motor connectors which are easily accessable on the fan shroud assembly. Check for damage to wires. Mice can be a problem, so look aroud in general for signs of things chewed up.
I suspect that if you solve your A/C problem the cooling system problem will be fixed. When the A/C compressor is on, the fans should be on low speed operation, when a refrigerant gas pressure is in a certain range and when vehicle speed is low (below 38 km/h).
After a boil over, the pressure cap or stat can be damaged. Stat is not easy to replace.
If the temp sensor is out of range or implied impossible or improbably temperatures or temperature changes, there will be a CEL and and codes to that effect.
